Pesto Pasta

This is an absolute winner! We have it as a quick and easy dinner, or as a yummy side with BBQ or cold meat. I’ve got a basil plant which has been thriving and regenerating for about 4 years, even through the drought. When I get a bit of a glut, it’s pesto time!

Serves 4

Ingredients

2-3 cups pasta

1 cup fresh basil

1 cup baby spinach

Juice of ½ a lemon

1 tbsp parmesan cheese

1 garlic clove crushed

¼ cup pine nuts (optional)

¼ cup olive oil

Salt and pepper

 

Method

1. Cook pasta per packet instructions

2. Blend all remaining ingredients together. If too thick add more oil or some water.

3. Drain pasta, immediately stir in pesto to warm through and serve.

 

Tractor Snacks Tip

Add extra goodies to warm pasta for more flavour such as grilled chicken, halved cherry tomatoes, roasted pumpkin, sliced capsicum, steamed asparagus (chopped to 2cm lengths), fresh baby spinach, crumbled feta, pine nuts.

Can be frozen with pasta or sauce alone. The vivid green may discolour a bit when reheated but still tastes great.
