Beef and Pumpkin Massaman Curry

There is nothing better on a cool evening than a bowl of warm, tender beef curry and rice. Massaman is generally a rich and tasty curry with only a little bit of spice, so perfect for at home or out in the paddock.

Serves 4-6

 

Ingredients

1 onion chopped

1kg cubed beef

1 jar Massaman curry paste (210g jar)

800ml coconut cream

½ a butternut pumpkin diced in 2cm cubes

½ cup peanuts

Olive oil

Rice to serve

 

Method

1. Preheat oven to 140°C.

2. Fry off onion with a drizzle of oil in cast iron casserole pan, add beef and brown.

3. Add curry paste and stir through beef for 2mins to cook off, then add coconut cream and water from rinsing the cans (roughly ½ cup).

4. Cook in low oven for 4-5 hrs or until meat is tender and falling apart. In the last hour add pumpkin and peanuts. Ensure sauce covers all ingredients or add some more water.

5. Serve over rice.

 

Tractor Snacks Tip

Preferred curry paste is Five Tastes Asian Cuisine.

Other vegetables may also be used such as carrot, zucchini, etc.

To thicken, remove the lid for the final 30 mins or so.

Could also fry off ingredients in fry pan then add to slow cooker instead.

Suitable to freeze. Reheat in microwave or in a saucepan, being careful that beef and pumpkin don’t break apart too much.
