Creamy Tomato Pasta

My husband calls this ‘Italian bubble and squeak’ as it’s practically a fridge cleanout pasta! Despite being made of pantry and fridge staples it is full of flavour. Great for the end of the week before you can get to the shops for groceries!

Serves 3-4

 

Ingredients

2 cups pasta

3 rashers bacon

6 sliced mushrooms

8-10 sundried tomatoes plus 1 tbsp oil

8-10 olives, halved

2 tbsp tomato paste

Handful of baby spinach

½ cup chopped fresh basil (or 2 tsp dried herbs)

2 tbsp sour cream

Parmesan to garnish

 

Method

1. Cook pasta while making sauce.

2. In a frypan over medium heat fry off bacon. Add mushrooms and cook until browning.

3. Add olives, sundried tomatoes and oil, tomato paste and ½ cup pasta water and stir.

4. Add baby spinach, basil and sour cream. Stir to warm through the cream and wilt the spinach.

5. Toss pasta through sauce and serve with fresh basil and parmesan.

 

Tractor Snacks Tip

Add grilled chicken, chorizo, or cherry tomatoes for some more goodness!

For more veggies, add diced zucchini, broccolini, peas, capsicum, asparagus or more spinach.

Suitable to freeze. Just add extra pasta water for more sauce to ensure it doesn’t dry out when reheated, or add a dash of water when reheating.

Use DF cream instead of sour cream or omit all together to make dairy free.
