White Rocky Road

My version of White Christmas, suitable for any time of the year. Dangerously sweet so chop into small pieces!

Ingredients

2 blocks Cadbury white chocolate

1 small packet pistachios

1 small packet dried cranberries

½ cup coconut

½ small pack marshmallows, chopped

Method

1. Combine all dry ingredients, reserving a few cranberries and pistachios for decorating the top.

2. Break chocolate into a microwave safe dish and microwave for 30 seconds at a time, stirring regularly until melted. Stir melted chocolate through other ingredients.

3. Pour into a square cake tin lined with baking paper, spread out and quickly top with remaining cranberries and pistachios.

4. Refrigerate until firm then slice into small pieces.

Tractor Snacks Tip

Similar to White Christmas, so to bulk out add rice bubbles, and to reduce melting add some Copha.
