Banana Bread

Imagine sitting on the grass soaking up the sun with a coffee in hand, snacking on deliciously soft and buttery banana bread for morning tea. Instead of paying for expensive café banana bread here’s a cheaper and just as delicious version. A fabulous treat, gift for a friend or just a great way to use up the old bananas in the fruit bowl.

Ingredients

1 cup caster sugar

1 egg

125g butter at room temperature

1 cup mashed banana

2 tbsp milk

2 cups sifted plain flour

1 tsp baking powder

½ tsp bi carb soda

1 cup walnuts or choc chips

 

Method

1. Preheat oven to 180°C.

2. Cream sugar, butter and egg until light and creamy.

3. Combine banana and milk and add to wet mixture.

4. Sift in flour, bi carb and baking soda and mix.

5. Toss walnuts or choc chips through 1 tbsp plain flour to coat. Add to batter and lightly mix to just combine.

6. Pour into a greased and lined loaf tin and bake for 1 hour. Cool in the tin.

 

Tractor Snacks Tip

Cool banana bread on bench then refrigerate. Once cold slice with a serrated knife for neat cuts, then individually wrap in glad wrap and freeze for a quick grab-and-go breakfast or snack.

Frozen banana can also be used for this recipe. If you’ve got too many to use up from the fruit bowl, remove their skins and freeze in a ziplock bag.

Dairy-free butter and milk (e.g. soy or almond) can be used to make dairy free.
