Sprinkle Biscuits

During lockdown (one of them - they all seem to blend together) my favourite café in town started selling rolls of sprinkle cookie dough. I decided to give one a try for lunchbox treats and have to admit not many made it to the lunchbox! So I decided to make my own version. These are a little different but surely sprinkles spark joy for everyone!

 

Ingredients

125g butter softened

3/4 cup sugar

2 tsp vanilla bean paste/essence

2 eggs

2 cups plain flour

2 tsp baking powder

Sprinkles

 

Method

1. Preheat oven to 200°C. Beat butter and sugar until smooth. Beat in vanilla and eggs.

2. Add flour and baking powder. Once mixed, add roughly 2 tbsp sprinkles and mix through the dough.

3. Roll teaspoons of dough in hands to make a ball, squash slightly then press into sprinkles in a bowl.

4. Place biscuit on baking tray and press down slightly to stick sprinkles in.

5. Bake in 200C oven for 12-15 mins or until golden.
