Jam Drops

A nostalgic memory for many. My first memory of jam drops was making them with a great friend baby sitting my sister and I as children. (She also made play dough from scratch so it was a pretty great day!)

Whenever I take these somewhere or post about them, it’s incredible how many people break into a smile and fondly comment on their love for these sweet and sticky biscuits.

 

Ingredients

125g butter, softened

½ cup caster sugar

1 tsp vanilla essence

1 egg

1 ½ cups SR flour

~1/3 cup jam

Method

1. Beat butter, sugar and vanilla until pale and creamy.

2. Add egg and beat until combined.

3. Sift flour into wet mixture and stir until combined.

4. Roll teaspoons of mixture into balls and place onto lined trays. Make a well in the middle of each ball with a finger.

5. Spoon about ½ a teaspoon of jam into the well.

6. Bake in a moderate oven (180°C) for 15 mins or until golden.

Tractor Snacks Tip

Store in an airtight container lined with baking paper for up to a week, or freeze in a ziplock bag or container.

I double the mixture to make a big batch and freeze half for later.

Any jam can be used for these, not just the traditional raspberry or strawberry.

If you want firmer biscuits that don’t spread, ensure the dough is somewhat firm which may need a little bit of extra flour.
