Lemon Coconut Slice

A simple, refreshing, crowd-pleasing slice perfect for lunchboxes, platters or a quiet moment with a cup of tea.

Ingredients

Base

80g butter melted

250g sweetened condensed milk

250g crushed Arnotts Marie biscuits (1 pack)

1 cup desiccated coconut

Juice and zest from 1 lemon

Frosting

3 cups icing sugar

90g butter softened (room temp)

5tbsp lemon juice

2-3 tbsp desiccated coconut

 

Method

1. Base: Crush biscuits by hand or in food processor until course crumb. Add zest and coconut and combine. Add wet ingredients and mix well until combined. Press flat into a lined slice tin and refrigerate until firm.

2. Frosting: Whisk butter, lemon juice and icing sugar together to make a creamy frosting. Spread frosting on top of slice base, sprinkle with coconut and refrigerate until set.

3. Once set, remove from tray and slice. Refrigerate or can be frozen also.

 

Tractor Snacks Tip

A regular can of sweet condensed milk is 395g. To use the full tin (and get more slice) multiply the whole recipe by 1.5, so it uses 1.5 packs of biscuits (which keep fine in an airtight container) and multiply ratios of everything else by 1.5.

Slice and freeze in an airtight container. Defrosts quickly, so can be transferred straight to the lunchbox or platter.
