Pasta Boscaiola

I’ve gone through phases of making this weekly or fortnightly, it’s that simple and tasty. Whenever there are mushrooms in the fridge they are often destined for this recipe! A great fork meal, and reheats well.

Serves 2-3

Cooking time 15 minutes

 

Ingredients

3 rashers bacon diced

3 shallots chopped

6-8 small mushrooms chopped

3 cloves garlic crushed (or 3 tsp garlic granules)

1 tsp oregano

1 tsp chicken stock powder

Salt and pepper

1 tub of Philadelphia cream cheese cooking cream. Alternately small tub of cream.

Big handful baby spinach

2 serves of pasta

 

Method

1. Cook pasta in salted water as per packet instructions while making sauce, reserving some pasta water.

2. In a frypan or wok over medium heat fry bacon, shallots, mushrooms and garlic until browning.

3. Add oregano, pepper and stock powder. Stir in cooking cream. Add spinach to wilt.

4. Add roughly ½ cup of pasta water to sauce to thin out if needed. Toss pasta through sauce and serve with parmesan.

Can also add diced chicken, steamed asparagus, broccolini or other vegetables if desired.
