Curried Sausages

An old school favourite. Make fresh or a great way to use up leftover BBQ sausages.

Serves 3-4

 

Ingredients

5 fat or 8 thin sausages

1 onion diced

1 carrot chopped

1 diced tomato

2 tsp curry powder

1 tbsp tomato paste

1 cup beef stock (or water)

½ cup frozen peas

2 tbsp sour cream or cooking cream

 

Method

1. Fry off or BBQ sausages until mostly cooked through. Chop into bite-sized rounds.

2. In a deep saucepan/pot on medium heat fry off onion then add carrot and tomato and warm through.

3. Add curry powder and cook off for a couple of minutes until fragrant.

4. Add tomato paste, sausages and stock. Simmer with lid on for 30 minutes. Add more stock or water if needed.

5. Around 10 minutes before serving add sour cream/cooking cream and peas. Warm through and serve with rice or mashed potato.

 

Tractor Snacks Tip

Can easily be made with leftover sausages from another meal.

Use DF cream instead of sour cream for dairy free.
