Cam’s Quiche
Anyone who says “men don’t eat quiche” aren’t cooking it right! This is a winner in our household for a warm lunch served with salad (even if it does get doused in tomato sauce), and still tastes great cold.
Serves 4-6
Preparation time 10 mins. Cooking time 1 hr.
Ingredients
2 sheets puff or shortcrust pastry
5 rashers bacon diced
3 shallots sliced
1 cup cherry tomatoes chopped
1 cup grated cheese
1 tbsp self raising flour
6 eggs
1 cup milk
Onion jam
Salt and pepper
Method
1. Preheat oven to 180°C.
2. Fit pastry to a greased dish and blind bake for about 10-15 mins then allow to cool. (Doesn’t matter if it’s a bit rough, as long as pastry is slightly curled over the edges of the pan to stop it sliding down and having a really shallow quiche)
3. In a bowl combine bacon, tomatoes, shallots and cheese. Add flour, salt and pepper and coat all ingredients.
4. Whisk eggs and milk together and add to other fillings. Stir to just combine and pour into pastry-filled tin. Dollops small teaspoons of onion jam across the top.
5. Bake for 40mins or until golden and the wobble is gone
Tractor Snacks Tip
Could also use spinach, roasted pumpkin, feta, grated zucchini etc.
Perfect hot or cold, and can be frozen.
