San Choy Bau / Korean Beef Bowl

A fresh summery dinner, perfect as something light in lettuce cups or serve with rice noodles to bulk it up.

Serves 2

Preparation time 15 mins

 

Ingredients

1 tbsp sesame oil

2 tsp minced garlic

2 tsp minced ginger

1 tsp minced chilli (optional)

500g mince (beef, pork or chicken)

2 tbsp oyster sauce

2 tbsp soy sauce

1 lime, juice and rind

2 stalks of shallots chopped

1 iceberg lettuce

Finely chopped carrot and capsicum

Sesame seeds

Fried onions

Sriracha (optional)

 

Method

1. In a wok or frying pan over medium to high heat fry the mince in sesame oil along with garlic, ginger and chilli. Add oyster and soy sauces.

2. Once cooked through take off the heat and add lime juice, rind and shallots.

3. Serve in lettuce cups with capsicum and carrots, topped with sesame seeds, fried onions and sriracha (depending on personal preference).

 

Tractor Snacks Tip

To bulk out more add cooked vermicelli rice noodles to the mince mixture at the end. Alternately the beef can be served on top of noodles with chopped salad on the side, as pictured.

For extra vegetables add chopped Chinese spinach to the mince and cook until wilted.
