Paper-wrapped barramundi

A great way to make delicious, tender barramundi best served with rice and steamed vegetables

Serves 2

Ingredients

2 barramundi fillets

1 tsp garlic

1 tsp ginger

2 tsp Rosie’s chilli jam

1/2 tsp sriracha

2 tsp soy sauce

2 tsp sesame oil

2 tsp malt vinegar

Method

  1. Mix sauces.

  2. Place each fillet of fish individually on a rectangular piece of baking paper. Spoon over roughly 2 tablespoons of sauce for each fillet and wrap by bringing long edges together, roll down to close and fold up sides. Bake in 200°C oven for 12-15 mins.

  3. Be careful when opening paper due to steam. Serve over rice and vegetables.

Tractor Snacks Tip

In the absence of chilli jam, substitute for roughly 1/2 tsp chilli (paste or dried) and 2 tsp honey.
